For me this chicken salad is as refreshing as a spring day. As soon as spring arrives this is the first thing I make. At one time I would wrinkle my nose and say, "ewwww grapes with chicken salad?!" However, after trying this tangy sweet tasty dish, I was so sorry I hadn't tried it sooner. Grapes lend this salad with just a hint of sweetness and pairs well with the chicken. I prefer the red flame seedless grapes and rotisserie chicken is the best.
2 cups chopped chicken
1 cup grapes cut in half
2 celery stalks diced
1 red pepper diced
1/2 cup compliant mayonnaise
2 T fresh cilantro chopped
1 T fresh dill
1 T chopped fresh chives
1/2 tsp roasted garlic powder
1/2 tsp toasted onion powder
sea salt and pepper to taste
Step 1: In a medium size bowl add diced chicken, halved grapes and chopped celery and red pepper.
Step 2: Mince dill, chives and cilantro.
Step 3: In a bowl, mayonnaise, spices. Pour sauce over chicken and vegetables and mix thoroughly.
Optional: Serve in red bell pepper with slices of avocado on top and a bowl of fruit.
